Objective – With 8 bars on board it was really important to ensure each had their own identity and offered drinks and entertainment to match these concepts. All bars offered a standard bar menu, but to be able to offer range and choice we wanted to offer signature drinks in each venue.
My role – to oversee identity and concept development, ensuring feasibility within budget and work with Apollo catering to develop menus and follow through identities with glassware and operations to deliver the concepts.
Solution – Highlights include:
- Bar 11 – Classic martini bar with infusion based drinks and flair cocktails
- Pool bars – Popular outdoor bars where speed of service and frozen cocktails are paramount
- Atrium Bar – Classy, low key lounge bar with prosecco themed cocktails
- Live Room – Contemporary pub feel with a wide choice of beers
- The Coffee Port – The everyday treats we Brits love with speciality Lavazza brand coffee
- PLUS 2 bars in entertainment venues offering the standard bar menu
Outcome – The identities informed the menus, which are then easier to explain to customers and provide more range and choice tailored to the target market with signature drinks driving improved revenue.
